- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 2 cups low-sodium chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 cups frozen mixed vegetables
- Salt and pepper to taste
- 1 tsp paprika
Instructions
- Preheat the oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
- In a bowl, mix rice, cream of chicken soup, and chicken broth until well combined.
- Place seasoned chicken breasts in the baking dish and cover them with the rice mixture.
- Sprinkle frozen vegetables on top and season with onion powder, garlic powder, salt, pepper, and paprika.
- Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
