  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 cups frozen mixed vegetables
  • Salt and pepper to taste
  • 1 tsp paprika

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
  2. In a bowl, mix rice, cream of chicken soup, and chicken broth until well combined.
  3. Place seasoned chicken breasts in the baking dish and cover them with the rice mixture.
  4. Sprinkle frozen vegetables on top and season with onion powder, garlic powder, salt, pepper, and paprika.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
