  • 2 tsp Cajun seasoning
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse dried red beans under cold water; if using canned, drain and rinse.
  2. Chop onion, bell pepper, celery, and garlic into small pieces.
  3. In a large pot over medium heat, heat olive oil. Add the onion, bell pepper, celery, and garlic. Sauté until onions are translucent (about 5 minutes).
  4. Stir in the red beans and vegetable broth; bring to a gentle boil while stirring occasionally.
  5. Add Cajun seasoning along with salt and pepper to taste; simmer on low for 30-40 minutes until beans are tender.
  6. Cook long-grain rice according to package instructions.
