Ingredients
Scale
- 4 medium russet potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning (adjust to taste)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 green onions, sliced (for garnish)
- Salt & pepper to taste
Instructions
- Prepare your veggies by washing and peeling the potatoes, then dicing them. Chop the onion and mince the garlic.
- In a large pot over medium heat, melt butter or oil. Sauté onion until translucent (about 3-4 minutes), then add minced garlic for an additional minute.
- Stir in diced potatoes and chicken broth; bring to a gentle simmer for 10-15 minutes until potatoes are tender.
- Season with Cajun seasoning, salt, and pepper. Stir well to combine.
- For a creamy texture, blend the soup using an immersion blender or in batches in a traditional blender, leaving some chunks for texture.
- Lower heat and stir in heavy cream until fully combined. Simmer for another 5 minutes before serving hot with sliced green onions on top.
