  • 1 can (15 oz) kidney or black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 cup coarse cornmeal
  • 1 cup whole milk
  • ½ cup shredded cheddar cheese
  • 1 cup diced bell peppers (red or green)
  • 1 cup chopped onions
  • 2 large eggs
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 375°F (190°C) and grease a large casserole dish.
  2. 2. In a skillet over medium heat, sauté onions and bell peppers until softened.
  3. 3. Add ground beef, chili powder, cumin, garlic powder, salt, and pepper; cook until browned.
