- 2 tbsp chili powder
- 1 cup coarse cornmeal
- 1 cup whole milk
- ½ cup shredded cheddar cheese
- 1 cup diced bell peppers (red or green)
- 1 cup chopped onions
- 2 large eggs
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 375°F (190°C) and grease a large casserole dish.
- 2. In a skillet over medium heat, sauté onions and bell peppers until softened.
- 3. Add ground beef, chili powder, cumin, garlic powder, salt, and pepper; cook until browned.
- 4. Stir in beans and tomatoes; let simmer for about 10 minutes.
- 5. In another bowl, mix cornmeal, milk, eggs, melted butter, salt, and sugar until smooth.
