  • 2 cups bell peppers (1 red, 1 yellow, 1 green), sliced
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 tablespoons vegetable oil
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil

Instructions

  1. Rinse the rice under cold water until clear. Combine with 2 cups of water and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low and cover; cook for 15-20 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sauté onions for about 3-4 minutes until translucent, then add bell peppers and cook until slightly softened.
  3. Add sliced beef sirloin to the skillet; season with salt and pepper. Cook until browned, about 5-7 minutes.
  4. In a small bowl, whisk together soy sauce, brown sugar, and sesame oil. Pour over the beef mixture in the skillet; cook for an additional 3-4 minutes until thickened.
  5. Fluff the cooked rice and serve in bowls topped with the beef-pepper mixture. Garnish with sesame seeds or chopped green onions if desired.
