- 2 boneless, skinless chicken breasts (about 1 lb)
- 1 cup Greek yogurt (full-fat)
- 1 medium seedless cucumber, diced
- 2 tbsp fresh dill, chopped
- 2 garlic cloves, minced
- Juice of 1 lemon (about 2 tbsp)
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your grill or skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through.
- While the chicken cooks, prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, diced cucumber (squeezed dry), dill, lemon juice, salt, and pepper in a bowl.
- Dice the cherry tomatoes and slice the red onion thinly.
- Once the chicken has cooled slightly, chop it into bite-sized pieces. In a large bowl, combine the chicken with tzatziki sauce and chopped veggies. Mix well.
- Serve in bowls or on plates, garnished with extra dill if desired.
