  • 4 cups fresh spinach, chopped
  • 2 medium Yukon Gold potatoes, cubed (about 2 cups)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 2 tbsp vegetable oil or ghee
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients: Wash and chop the spinach; peel and cube the potatoes.
  2. In a large skillet over medium heat, add oil or ghee. Sauté diced onions for about 5-7 minutes until golden brown.
  3. Stir in minced garlic and grated ginger; cook for an additional minute.
  4. Add cubed potatoes along with cumin, turmeric, salt, and pepper. Cover and steam for 10-15 minutes until tender.
  5. Uncover the skillet and gently fold in the spinach until wilted (3-5 minutes). Sprinkle garam masala before serving.
