  • 2 cups low-sodium vegetable broth
  • 3 tablespoons fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Juice of 1 lime (about 2 tablespoons)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice and vegetable broth. Bring to a boil over medium heat, then reduce to low and cover. Simmer for about 15 minutes until the liquid is absorbed.
  3. While the rice cooks, chop cilantro and mince garlic.
  4. Once cooked, remove from heat and let sit covered for 5 minutes. Fluff with a fork; stir in lime juice, garlic, cilantro, salt, and pepper.
