  • 4 cups low-sodium vegetable broth
  • 1 cup ditalini pasta
  • 1 (15 oz) can cannellini beans, rinsed
  • ¼ cup fresh parsley or basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened and onion is translucent.
  2. Stir in minced garlic for about 30 seconds until fragrant. Add the canned tomatoes, crushing them slightly as they cook.
  3. Pour in the vegetable broth along with salt and pepper; bring to a gentle boil while stirring occasionally.
  4. Once boiling, add ditalini pasta and rinsed cannellini beans. Reduce heat to simmer for about 10 minutes until pasta is tender.
