  • 34 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 1 cup fresh asparagus, chopped
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Cook penne pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then sauté until golden brown (6-7 minutes per side). Remove and set aside.
