  • 8 oz fettuccine or penne pasta
  • 2 cups fresh baby spinach
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  3. Add sliced mushrooms to the skillet and cook until golden brown, about 4-5 minutes.
  4. Stir in the spinach and sauté until wilted, about 2-3 minutes.
  5. Pour in heavy cream and let simmer while stirring until slightly thickened. Season with salt and pepper.
  6. Gradually add grated Parmesan cheese, stirring until melted and incorporated into the sauce.
  7. Toss cooked pasta into the sauce, adjusting consistency with reserved pasta water if needed. Serve hot.
