Instructions

  2. In a large bowl, whisk together flour, both sugars, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, mix vegetable oil and eggs until smooth. Fold in shredded carrots and nuts if using.
  4. Combine the wet and dry mixtures gently until just blended; a few lumps are acceptable.
  5. Divide the batter evenly between prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool for 10 minutes before transferring to wire racks to cool completely. Frost with cream cheese frosting before serving.
