Instructions

  2. In another bowl, mix ricotta, milk, eggs, and vanilla until smooth.
  3. Gradually fold wet ingredients into dry ingredients; avoid overmixing.
  4. Gently stir in chopped cherries.
  5. Preheat a nonstick skillet over medium heat and melt butter.
  6. Pour about 1/4 cup of batter for each pancake; cook until bubbles form on top (3-4 minutes). Flip and cook until golden brown.
