  • 1 lb fresh carrots, peeled and cut into sticks
  • 2 tbsp harissa paste
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/4 cup tahini sauce
  • 1 tbsp lemon juice (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine harissa paste, olive oil, minced garlic, salt, and pepper.
  3. Toss carrot sticks in the harissa mixture until evenly coated.
  4. Spread carrots on a parchment-lined baking sheet and roast for 25-30 minutes until tender and slightly charred.
  5. While roasting, whisk together tahini sauce, lemon juice, water (to desired consistency), salt, and pepper in a small bowl.
  6. Serve roasted carrots drizzled with tahini sauce and garnished with chopped parsley.
