  • 1 cup granulated sugar (divided)
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 2 large fresh lemons (juiced and zested)
  • 1 cup fresh raspberries
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, ½ cup granulated sugar, and softened butter until crumbly. Press into the bottom of a greased baking dish.
  3. In another bowl, whisk together eggs, remaining sugar, lemon juice, lemon zest, and baking powder until smooth. Gently fold in raspberries.
  4. Pour the filling over the crust evenly and spread gently.
  5. Bake for 25-30 minutes until set and lightly golden on top.
  6. Allow to cool completely before dusting with powdered sugar.
