  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup chopped pecans (toasted for extra flavor)
  • 16 oz softened cream cheese
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 3 large eggs (room temperature)
  • 1 cup light corn syrup
  • ½ cup brown sugar
  • ¼ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown; let cool.
  3. Beat softened cream cheese until smooth in a large bowl. Gradually add granulated sugar, sour cream, and vanilla extract until fully blended.
  4. Add eggs one at a time, mixing well after each.
  5. In another bowl, mix corn syrup, brown sugar, salt, and chopped pecans for the topping.
  6. Pour cheesecake filling over cooled crust and spoon topping mixture on top.
  7. Bake at 325°F (160°C) for 60-70 minutes until set but slightly jiggly in the center.
