  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium tangerines, segmented
  • 1 cup pitted green olives
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1.5 cups low-sodium chicken broth
  • 1 cinnamon stick
  • 2 tsp cumin seeds, toasted
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prep all ingredients: chop onions, mince garlic, and segment tangerines.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic until fragrant.
  3. Increase heat slightly and add chicken thighs; sear until golden brown on both sides (6-8 minutes).
  4. Add toasted cumin seeds, cinnamon stick, salt, pepper, and tangerine segments along with their juice. Mix well.
  5. Pour in chicken broth to cover most of the chicken. Bring to a simmer, reduce heat to low, cover, and cook for about 30 minutes.
  6. Stir in green olives during the last 10 minutes of cooking. Adjust seasoning if needed before serving.
  7. Serve hot over couscous or rice, garnished with chopped cilantro or parsley.
