  • 3 cups fresh broccoli florets
  • 2 tbsp olive oil (divided)
  • 4 garlic cloves, minced

  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 2 tbsp fresh lemon juice
  • Optional: Sriracha or chili paste for heat

Instructions

  1. 1. Marinate the chicken: In a bowl, combine 1 tbsp olive oil, soy sauce, honey or maple syrup, minced garlic, salt, pepper, and lemon juice. Add the chicken breasts and let them marinate for at least 15 minutes.
  2. 2. Preheat the grill: Heat your grill or grill pan over medium-high heat.
  3. 3. Grill the chicken: Place marinated chicken on the grill and cook for about 6-7 minutes per side until they reach an internal temperature of 165°F (75°C). Remove from the grill and let rest for five minutes before slicing.
  4. 4. Prepare broccoli: Toss broccoli florets in a bowl with remaining olive oil, salt, and pepper. Grill alongside chicken for about 4-5 minutes until bright green and tender-crisp.
  5. 5. Assemble bowls: Layer sliced grilled chicken and broccoli in serving bowls over rice or quinoa if desired. Drizzle with Sriracha or chili paste if using.
