  • 1 cup all-purpose flour (sifted)
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (smoked optional)
  • ½ tsp garlic powder
  • Oil for frying (vegetable or olive oil)

Instructions

  1. Preheat oven to 400°F (200°C) or heat oil in a skillet over medium-high heat.
  2. Cut the chicken breasts into strips about 1 inch wide.
  3. Set up a breading station: In one bowl, mix flour with salt, pepper, and paprika; in another bowl, beat the eggs; and in a third bowl, combine breadcrumbs with garlic powder.
  4. Dip each chicken strip into the flour mixture, then into the eggs, and finally coat with breadcrumbs.
  5. Carefully fry the strips in hot oil until golden brown on both sides (about 4-5 minutes each side) and cooked through (internal temperature of 165°F or 74°C).
