Instructions
- Rinse quinoa under cold water until clear. In a medium saucepan, combine quinoa and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes until fluffy.
- While quinoa cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, and finely dice red onion; set aside in a large mixing bowl.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
- Once quinoa has cooled slightly (about 5 minutes), add it to the mixing bowl with vegetables. Pour dressing over and toss gently until evenly coated.
