  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 small red onion, finely diced
  • 0.5 cup fresh mint leaves, chopped
  • Juice of 2 limes
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a medium saucepan, combine quinoa and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes until fluffy.
  2. While quinoa cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, and finely dice red onion; set aside in a large mixing bowl.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
  4. Once quinoa has cooled slightly (about 5 minutes), add it to the mixing bowl with vegetables. Pour dressing over and toss gently until evenly coated.
  5. Fold in chopped mint just before serving.
