  • 2 tbsp extra virgin olive oil (divided)
  • ½ cup raw hazelnuts
  • 1 red bell pepper, roasted
  • 4 garlic cloves
  • 1 tsp smoked paprika
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Spread hazelnuts on a baking sheet and toast for about 10 minutes, shaking halfway through.
  3. Toss broccoli florets with 1 tablespoon of olive oil, salt, and pepper on another baking sheet. Roast for 20-25 minutes until charred and tender.
  4. In a food processor, combine toasted hazelnuts, roasted red bell pepper, garlic cloves, smoked paprika, lemon juice, salt, and pepper. Blend until smooth.
  5. Once the broccoli is ready, drizzle with the romesco sauce and gently toss to combine.
