  • 1 lb boneless chicken thighs, diced
  • 1 green bell pepper, chopped
  • 1 onion, chopped (yellow preferred)
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 cup okra (optional)
  • 2 green onions (for garnish)
  • 2 tbsp olive oil

Instructions
