  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, grated
  • ½ cup crispy bacon bits (or turkey bacon)
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Cut the cauliflower into small florets and rinse thoroughly.
  2. In a large pot over medium heat, sauté the diced onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Add cauliflower florets and vegetable broth to the pot; bring to a boil. Reduce heat and simmer for 15-20 minutes until cauliflower is tender.
  4. Blend the mixture until smooth using an immersion blender or regular blender (allow to cool slightly if using a stand blender).
  5. Stir in cream cheese and heavy cream over low heat until melted and combined. Season with salt and pepper.
