Instructions

  3. Cube sweet potatoes, toss with olive oil, salt, and pepper, then spread on a baking sheet. Roast alongside chicken for about 20-25 minutes until tender.
  4. In a small bowl, whisk together minced garlic, lime juice, cilantro, remaining olive oil, salt, and pepper to make the mojo sauce.
  5. Slice cooked chicken and assemble each bowl by layering roasted sweet potatoes first, followed by sliced chicken. Drizzle generously with mojo sauce and top with sliced avocado.
