  • 4 boneless skinless chicken breasts
  • 2 fresh jalapeños, sliced (deseeded for less heat)
  • 2 ripe peaches, chopped
  • 2 tbsp honey
  • 3 tbsp lime juice (freshly squeezed)
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. In a bowl, mix olive oil, lime juice, honey, soy sauce, minced garlic, black pepper, and salt. Add jalapeños and peaches. Let it marinate for 15 minutes.
  2. Heat your grill to medium-high or preheat your oven to 400°F (200°C).
  3. Remove chicken from marinade and cook on the grill or in a baking dish for about 6-8 minutes per side until internal temperature reaches 165°F (75°C).
  4. In a saucepan over medium heat, combine leftover marinade with additional chopped peaches and jalapeños. Simmer for about 5 minutes until thickened.
  5. Plate the grilled chicken and drizzle with the peach-jalapeño sauce. Garnish with fresh herbs if desired.
