- 1 lb large shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups water
- 1/2 cup heavy cream
- 4 tbsp unsalted butter (divided)
- 2 tsp Cajun seasoning
- 1 cup low-sodium chicken broth
- 2 tbsp fresh lemon juice
- 2 green onions, sliced (plus extra for garnish)
- 2 cloves garlic, minced
- Fresh parsley for garnish
Instructions
- In a pot, bring 4 cups of water to boil. Gradually whisk in 1 cup of stone-ground grits. Reduce heat to low and cook for about 20 minutes, stirring occasionally.
- Once thickened, stir in heavy cream and 4 tablespoons of butter until creamy.
- In a separate pan over medium heat, melt 2 tablespoons of butter. Add shrimp seasoned with Cajun seasoning and cook for about 3-5 minutes per side until pink.
- Add minced garlic and green onions to the shrimp during the last minute. Pour in chicken broth and lemon juice; simmer until slightly thickened.
- Spoon creamy grits onto plates, top with Cajun shrimp mixture, and garnish with parsley and additional green onions.
