  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic and sun-dried tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook until golden brown, about 6-7 minutes per side. Remove from skillet and let it rest.
  3. In the same skillet, add minced garlic and sun-dried tomatoes; cook for about one minute until fragrant.
  4. Pour in heavy cream, scraping up any bits from the pan; simmer for 3-4 minutes until slightly thickened.
  5. Stir in fresh spinach until wilted.
  6. Cook pasta according to package instructions; drain and add to the skillet with sauce. Toss to combine.
