Instructions
- Rinse the long-grain rice under cold water until the water runs clear.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
- Add diced bell peppers and cook for about 3 minutes until slightly softened.
- Stir in the rinsed rice until well-coated with olive oil and vegetables.
- Pour in vegetable broth, diced tomatoes, lemon juice, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover tightly, and simmer for 15-20 minutes until liquid is absorbed.
