  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach (or kale)
  • 2 medium carrots, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup acini di pepe pasta (or any small pasta)
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, grated Parmesan, onion, garlic, egg, and Italian seasoning. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Sauté carrots and onions until onions are translucent.
  3. Pour in chicken broth and bring to a gentle boil. Stir in spinach until wilted.
  4. Gently add meatballs to the boiling broth and reduce heat to simmer for about 15 minutes until cooked through.
  5. Add acini di pepe pasta and cook according to package instructions until al dente.
  6. Serve hot with extra Parmesan cheese if desired.
