- 1 lb ground beef (80/20)
- 1/2 cup chopped fresh parsley
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes in juice
- 1 cup plain or Italian bread crumbs
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- 2 tbsp olive oil
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tsp Dijon mustard
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a skillet, heat olive oil and sauté onion until translucent; add minced garlic and cook for another minute.
- In a large bowl, combine ground beef, sautéed onion and garlic, breadcrumbs, eggs, Parmesan cheese, parsley, canned tomatoes, and Italian seasoning. Mix gently until combined.
- Shape the mixture into a loaf in the prepared pan.
- For the glaze, whisk together ketchup, brown sugar, and Dijon mustard; spread over the top of the meatloaf.
- Bake for about 1 hour until cooked through (internal temperature should reach 160°F). Let rest before slicing.
