  • 1 cup cashews (raw or roasted)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 tbsp fresh ginger (minced)
  • 4 cloves garlic (minced)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp pure maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 2 tbsp oil (for frying)

Instructions

  1. Cut the tofu into bite-sized cubes and prepare the vegetables by slicing the bell peppers and mincing the garlic and ginger.
  2. In a bowl, whisk together soy sauce, maple syrup, rice vinegar, and cornstarch until smooth.
  3. Heat oil in a large skillet over medium heat. Cook tofu cubes until golden brown on all sides (about 8-10 minutes).
  4. Add bell peppers, garlic, ginger, and cashews to the skillet; stir-fry for 3-4 minutes until fragrant.
  5. Pour the sauce over the stir fry mixture and cook for an additional 3-5 minutes until it thickens slightly.
  6. Serve warm over steamed rice or noodles.
