- 1 lb ground chicken
- 3 tbsp harissa paste
- 1 cup pearl couscous
- 1 large cucumber, diced
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground chicken, harissa paste, garlic powder, salt, and pepper. Mix until well blended.
- With wet hands, form the mixture into small meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown.
- While meatballs bake, boil water or broth in a saucepan. Add couscous and let sit covered for about 5 minutes until fluffy.
- In a bowl, mix diced cucumber, mint, parsley, lemon juice, salt, and pepper for the salad.
- Serve meatballs over couscous topped with cucumber salad.
