  • 1 lb ground chicken
  • 3 tbsp harissa paste
  • 1 cup pearl couscous
  • 1 large cucumber, diced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, harissa paste, garlic powder, salt, and pepper. Mix until well blended.
  3. With wet hands, form the mixture into small meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until golden brown.
  5. While meatballs bake, boil water or broth in a saucepan. Add couscous and let sit covered for about 5 minutes until fluffy.
  6. In a bowl, mix diced cucumber, mint, parsley, lemon juice, salt, and pepper for the salad.
  7. Serve meatballs over couscous topped with cucumber salad.
