  • 4 medium carrots, sliced
  • 4 medium Yukon Gold potatoes, diced
  • 2 yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme (or 2 sprigs fresh)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil (for searing)

Instructions

  1. Prep your ingredients: Wash and chop vegetables; trim fat from beef.
  2. Sear the beef: Heat olive oil in a skillet over medium-high heat. Brown the beef on all sides.
  3. Add aromatics: Sauté onions and garlic in the same skillet until golden brown.
  4. Combine everything: Transfer the beef, onions, garlic, carrots, potatoes, thyme, bay leaves, Worcestershire sauce, and broth into the slow cooker.
  5. Set it and forget it: Cover and cook on low for 8 hours or high for 4 hours.
