  • 1 cup buffalo sauce
  • 2 (14.5 oz) cans diced tomatoes (fire-roasted recommended)
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 cup bell peppers, chopped (variety of colors)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 cups low-sodium chicken broth
  • Fresh cilantro (optional)

Instructions

  1. 1. Prepare ingredients: Wash and chop onion, bell peppers, and mince garlic.
  2. 2. Sauté aromatics: In a skillet over medium heat, sauté onions and garlic until translucent (about 5 minutes).
  3. 3. Combine ingredients: In your slow cooker, add sautéed onions and garlic with diced tomatoes, kidney beans, bell peppers, chicken breasts, buffalo sauce, cumin, chili powder, and chicken broth. Stir well.
