- 1 cup buffalo sauce
- 2 (14.5 oz) cans diced tomatoes (fire-roasted recommended)
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 cup bell peppers, chopped (variety of colors)
- 2 tsp cumin
- 2 tsp chili powder
- 2 cups low-sodium chicken broth
- Fresh cilantro (optional)
Instructions
- 1. Prepare ingredients: Wash and chop onion, bell peppers, and mince garlic.
- 2. Sauté aromatics: In a skillet over medium heat, sauté onions and garlic until translucent (about 5 minutes).
- 3. Combine ingredients: In your slow cooker, add sautéed onions and garlic with diced tomatoes, kidney beans, bell peppers, chicken breasts, buffalo sauce, cumin, chili powder, and chicken broth. Stir well.
- 4. Slow cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
